The Salami with Pistachios is one of new “flavoured salami” Dolceterra; together with Salami with Olives, Walnuts, and Salami with Pine Nuts. A real Tuscan delicacy.
All these salamis have as a basic ingredient Prosciutto Meat Salami, a sweet and thin salami packaged with selected lean meats from pork thigh, where a part of a sweetmeat of bacon is added. This salami is not to much spicy, and for enhancing the sweet taste, a touch of honey and Marsala wine are added.
During the mixture, when the meat starts to bind, sweet pitted black olives cut into rounds are added.The Salami with Pistachios requires at least five weeks of seasoning, to be ready for consumption. The meat is seasoned in well-aerated rooms.
The taste of this salami binds well with the flavour of sweet black olives, typical Mediterranean fruit appreciated all over the world; the best grapes and emblem that the fertile lands of Tuscany can offer.
