Pecorino di Filiano is a Protected Designation of Origin (PDO) on the national list approved by the Ministry of Agricultural, Food and Forestry Policies, whose requirements are regulated by the production specification of the Basilicata Region.. Immediately recognizable for the sweet and enveloping scent. In the mouth it is buttery and soft despite its prolonged maturation that starts from a minimum of 6 months. The shapes also weigh 5kg.
