The rind is thin and its color is ivory. The paste is harder for the more mature cheeses with many small and bigger eyes scattered across. Taste. The taste is round, full to the palate, pleasant, lactic while the aftertaste is long, dolce, piccante due to the maturity with strong hints of herbs and nature.
