Blu ’61 is a soft blue cheese made with pasteurised cow’s milk. Blu ‘61 is aged for over 3 months during which its wheels are matured in local sweet Raboso Passito IGT wine and cranberries. It offers an intense and unique flavour, which is balanced by the sweet notes of passito wine.

With a thin red rind paved with berries on top and a paste that grows creamy and soft with age, Blu ’61 cheese has a memorable and striking appearance. This cheese is an award-winning cheese because it came first at the competition ALMA CASEUS 2012 in ‘Blue cheese’ category.

Blu ‘61 aromatic and intense notes are balanced by sweet and fruity tones, along with the scents of cherry. Although it is aged in wine, the wine flavours are not invasive but balance out with the creaminess of the paste to create an intensely hedonistic cheese.

Blu ’61 can be served alone and can pair nicely with a compote of fruit and balsamic vinegar. You can also pair it with a dessert wine or a sweet Italian passito.
